Batch for 7 small cookies
Ingredients:
- 2 dl Oatmeal
- 30g Sugar-free 90% Cocoa chocolate
- 3/4 dl Stevia sweetener
- 2 1/2 tbsp Unsweetened Almond Milk or Low Fat Milk
- 2 tbsp Whey protein
- 1 tbsp Coconut oil
- 1 tbsp Peanut butter (99,3%)
- 1 pinch Bicarbonate
- 1 pinch Baking powder
- 1 pinch Vanilla powder
- See to that the chocolate is at room temperature.
- Use a coffee grinder or blender, grind the oatmeal to the consistency of flour.
- Put all the dry ingredients into a bowl and mix
- Put the peanut butter and coconut oil in a mug, and microwave for about 20 sec.
- Add milk to the peanut butter and coconut oil mix, and stir.
- Pour the mix into the bowl with the dry mix and stir it together until you get something that resembles a cookie dough.
- Chop the chocolate and fold it into the dough.
- Make 7 equal sized cookies and flatten out. I recommend using a teaspoon to portion them out.
- Bake at 160°C for about 10 min. Take out the cookies when
you think they're ready.
